Ingredients

  • 4oz chicken breast

  • handful of mixed greens

  • 1/4 cup chredded carrot

  • 1/4 cup sliced red bell pepper

  • 1 tbsp fresh cilantro


Dressing:


  • 1 tbsp coconut aminos (substitute for soy sauce)

  • 1 tbsp rice vinegar

  • 1 tsp honey

Preparation

  1. Season and cook the chicken breast

  2. Cut into bite-size pieces

  3. Toss together with vegetables

  4. Top with dressing and mix thoroughly
