Avocado and Egg Toast

1 Serving




  • 1 slice of whole grain bread

  • 1/2 avocado

  • 1 large egg (fried, poached or boiled)

  • salt and pepper for taste


  1. Toast the bread until golden brown.

  2. While the bread is toasting, slice the avocado in half, remove the pit, and scoop out the flesh into a small bowl. Mash the avocado with a fork until it's mostly smooth.

  3. In a small pot, bring enough water to a boil to cover an egg. Once the water is boiling, reduce the heat to low and use a slotted spoon to gently lower the egg into the water. Cook for about 3-4 minutes for a soft-poached egg or 5-6 minutes for a hard-poached egg.

  4. Once the bread is toasted, spread the mashed avocado on top. Place the poached egg on top of the avocado and sprinkle with salt and pepper and any other spices.
