Ingredients
4 oz chicken breast
1 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
1 clove garlic, minced
Salt and pepper to taste
1 bunch asparagus, steamed
1 cup cauliflower florets
1 tbsp butter
1 tbsp cream cheese
Salt and pepper to taste
Preparation
In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper.
Place the chicken breast in a shallow dish and pour the balsamic marinade over it.
Marinate for 15-30 minutes. Heat a grill or a grill pan over medium heat.
Remove the chicken breast from the marinade and grill for 6-8 minutes per side, or until the chicken is cooked through.
Meanwhile, steam the asparagus until tender. In a separate pot, bring water to a boil and cook the cauliflower florets until very tender.
Drain the cauliflower and transfer it to a blender or food processor.
Add butter, cream cheese, salt, and pepper, and blend until smooth and creamy.
Serve the balsamic chicken with steamed asparagus and cauliflower mash.
