Balsamic Chicken with Cauliflower Mash

Serves 1




  • 4 oz chicken breast

  • 1 tbsp olive oil

  • 2 tbsp balsamic vinegar

  • 1 tbsp Dijon mustard

  • 1 clove garlic, minced

  • Salt and pepper to taste

  • 1 bunch asparagus, steamed

  • 1 cup cauliflower florets

  • 1 tbsp butter

  • 1 tbsp cream cheese

  • Salt and pepper to taste


  1. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper.

  2. Place the chicken breast in a shallow dish and pour the balsamic marinade over it.

  3. Marinate for 15-30 minutes. Heat a grill or a grill pan over medium heat.

  4. Remove the chicken breast from the marinade and grill for 6-8 minutes per side, or until the chicken is cooked through.

  5. Meanwhile, steam the asparagus until tender. In a separate pot, bring water to a boil and cook the cauliflower florets until very tender.

  6. Drain the cauliflower and transfer it to a blender or food processor.

  7. Add butter, cream cheese, salt, and pepper, and blend until smooth and creamy.

  8. Serve the balsamic chicken with steamed asparagus and cauliflower mash.
