Cilantro Lime Shrimp

Ingredients

  • 1 garlic clove

  • 1/4 cup diced onion

  • 1 tsp olive oil

  • 4oz cooked shrimp

  • 1/4 cup fresh cilantro

  • 1/2 lime

  • serving of brown rice ( cauliflower rice that can either be made or bought)

Preparation

  1. heat 1 tsp olive oil, sautee garlic and onion - cook until tender

  2. add the shrimp, cilantro and lime (along with any other prferred seasonings)- cook for 2-3 mins until heated through

  3. Serve over brown rice or cauliflower rice
