Ingredients
4 oz salmon fillet
1 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp Dijon mustard
Salt and pepper to taste
2 cups mixed greens
1/4 cup sliced almonds
1/4 cup crumbled feta cheese
1/4 cup cherry tomatoes, halved
Preparation
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to make a vinaigrette.
Rub the salmon fillet with olive oil, salt, and pepper.
Grill the salmon fillet over medium heat for about 4-5 minutes per side or until cooked through.
Let it cool for a few minutes, then flake it with a fork.
In a salad bowl, toss mixed greens with sliced almonds, crumbled feta cheese, cherry tomatoes, and the grilled salmon.
Drizzle with the lemon vinaigrette.
