Grilled Salmon with Lemon Vinaigrette

Serves 1




  • 4 oz salmon fillet

  • 1 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

  • 2 cups mixed greens

  • 1/4 cup sliced almonds

  • 1/4 cup crumbled feta cheese

  • 1/4 cup cherry tomatoes, halved


  1. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to make a vinaigrette.

  2. Rub the salmon fillet with olive oil, salt, and pepper.

  3. Grill the salmon fillet over medium heat for about 4-5 minutes per side or until cooked through.

  4. Let it cool for a few minutes, then flake it with a fork.

  5. In a salad bowl, toss mixed greens with sliced almonds, crumbled feta cheese, cherry tomatoes, and the grilled salmon.

  6. Drizzle with the lemon vinaigrette.
