Ingredients
2 large eggs
1/4 cup chopped red onion
1/4 cup chopped bell pepper
1/4 cup crumbled feta cheese
1 Tbsp. chopped fresh parsley
1 Tbsp. olive oil
paprika
garlic powder
italian seasoning
salt & pepper
Preparation
Sautee chopped onion and peppers in oil on high-med heat until onions become translucent.
Whisk together 2 eggs, add sppices
Turn heat down to med-low, pour egg mixture over sauteed veggies
Add feta cheese
Cover and allow to cook until eggs are solid
Once cokked top with parsley and serve
