Mediterranean Omelette

Ingredients

  • 2 large eggs

  • 1/4 cup chopped red onion

  • 1/4 cup chopped bell pepper

  • 1/4 cup crumbled feta cheese

  • 1 Tbsp. chopped fresh parsley

  • 1 Tbsp. olive oil

  • paprika

  • garlic powder

  • italian seasoning

  • salt & pepper

Preparation

  1. Sautee chopped onion and peppers in oil on high-med heat until onions become translucent.

  2. Whisk together 2 eggs, add sppices

  3. Turn heat down to med-low, pour egg mixture over sauteed veggies

  4. Add feta cheese

  5. Cover and allow to cook until eggs are solid

  6. Once cokked top with parsley and serve
