  • 2 Eggs

  • 1/2 cup roasted sweet potato (can also be sauteed in pan)

  • 1/4 cup onion

  • 1/4 cup sweet red pepper

  • 1/4 cup tomato

  • 1/2 cup sauteed spinach or kale

  • 2 tsp olive oil

  • 1/4 avocado sliced

  • paprika, onion powder, garlic powder, italian seasoning


  1. Heat olive oil in a non-stick pan on med-high heat

  2. Cook sweet potato, onions, peppers and tomatoes until onions are translucent and potatoe bgein to soften

  3. Add spices and stir in until well incorporated

  4. Add spinach, cook until wilted

  5. Reduce heat to low-med

  6. Crack 2 eggs between the vegetable mixture

  7. Cover and cook until the yolk is at seired hardness and sweet potate is at desired softness

  8. Serve and top witha few slices of avocado
