Ingredients
2 onions
4 carrots
4 stalks of celery
4 tomatoes
4 garlic cloves
2 tbsp olive oil
10 mushrooms
onion powder
garlic powder
paprika
salt & pepper
thyme
rosemary
2 bay leaves
Preparation
Directions:
Roast Vegetables
Heat oven to 400F
Chop vegetables roughly, toss in olive oil and roast in oven for 15 mins. Stir and then roast again for another 15 mins. Stir once more na then roast until they are nicely brown (another 10 mins)
Make Broth
Place all the vegetables into a pot - add all the spices and then cover with water
Bring to a boil and then reduce to a simmer - cook partially covered for 45 mins
Strain broth and use (alternatively you can blend all the vegetables up) don’t forget to remove bay leaves
