Ingredients
2 eggs
1 cup spinach, chopped
1/4 cup tomato, chopped
1/2 cup mushrooms, sliced
1/4 cup onion, chopped
1 tsp olive oil
paprika, black pepper, onion powder, garlic powder (try to avoid adding salt)
Preparation
Beat the eggs with the listed seasinings
Heat the oil in a non-stick pan on medium heat
Cook onion until translucent, add mushrooms and tomato cook until tender
Add spinach and allow to wilt
Pour the egg mixture over teh evegetables and cook until its set (cover the pan to cook the top faster)
