Turkey Bolognese

Ingredients

  • 1 spaghetti squash (a serving of whole-wheat spaghetti)

  • 4 oz ground turkey breast

  • 1/4 cup diced onion

  • 1 minced garlic

  • 1/4 cup diced carrot

  • 1/2 cup canned tomatoes

  • 1/4 tsp oregano

  • red pepper flakes

  • balck pepper

  • paprika

  • onion and garlic powder

  • italian seasoning

Preparation

  1. cut spaghetti squash in half and remove seeds (alternatively, boil water for regular spaghetti)

  2. Place the squash halves cut side down in a baking dish with 1/4 cup water

  3. Bake at 375F for 30-40 mins (until tender)

  4. In a pan cook the ground turkey until browned

  5. add onion, garlic, and carrots - cook until softened

  6. Add tomatoes and seasonings

  7. Allow to simmer for 10-15 mins

  8. Scrape the spagetto flesh into a bowl and top with the turkey bolognese
